KERALA DUCK FRY
DUCK (THARAVU FRY)
A dish famous in the thattu kad
THE INGREDIENTS
Duck - 1 cut into medium or semi-large pieces
Turmeric - 1 tsp
Garlic pods - 5 nos
Green Chillies - 4 nos
Pepper - 2 tbsp
Coriander - 1 tbsp
Cinnamon(Karugapatta) - As reqd
Cloves(Grambu) - As reqd
Salt - to taste
THE PREPARATION
Grind all the ingredients and mix with enough water to cook the duck and add enough salt as required.
Cook the duck in this mixture in a closed container.
Evenly fry the cooked duck in dalda or ghee.
Transfer the duck to a serving dish.
Thicken the gravy in the same skillet and pour around the duck
